Trying to keep up with your new year’s resolutions? Or perhaps you just need something a little sweet mid-afternoon to fix a craving. Well, this delicious “nice cream” from the recipe wizards at Healthy Luxe ticks all of our boxes. Not only is it refined sugar-free, but it can also turn into a great protein hit if you add some caramel-flavoured protein power to it (about 2 tbsp). This recipe serves three people… or just one, no judgement here!

Healthy Choc Top Nice Cream

What you’ll need

Nice cream
2 large frozen bananas (the riper the better)
2 tbsp vegan caramel protein (optional)
1 Tbsp maple syrup
2 tsp hulled tahini
1/2 tsp cinnamon
1/4 tsp salt

Toffee
3 Tbsp maple syrup
2 Tbsp smooth peanut butter (we used Pic’s Peanut Butter – it’s a favourite)
1/2 cup oat milk (choose one with as little ingredients as possible)
1 tsp coconut oil

Choc topping
40 grams dark chocolate, melted
1/2 tbsp coconut oil, melted

 

1. Combine all ingredients for the toffee and refrigerate 30 minutes to 1 hour.
2. To prepare the nice cream, combine all ingredients in a high power blender, blend until smooth and creamy.
3. Spoon into a bowl and top with the toffee mix.
4. Place in the freezer for 3-4 hours.
5. Combine chocolate and coconut oil, mix well.
6. Pour on top of the toffee blend and dust with sea salt. Pop back into the freezer for a few minutes until the choc top hardens slightly.
7. Crack the top, serve and enjoy.
