Look, we’ve only tested this recipe on our team, but the consensus was that it is indeed the best sandwich we’ve ever tasted.
Meat-lovers beware – this recipe from nutritionist Zoe Bingley- Pullin is for two, but we’re betting that you probably won’t share it. It takes 10 minutes to prep for and another 10 minutes in a sandwich press, but trust us, it’s worth it.
Rare Roast Beef, Sauerkraut, Beetroot & Goat’s Cheese Toasted Sandwich
4 slices multigrain bread
Extra virgin olive oil
2 tbsp goat cheese, softened
1 beetroot, shredded
2 tbsp sauerkraut
200g rare roast beef, sliced
1⁄4 cup Perino gold tomatoes, sliced into quarters
1 handful rocket leaves
Wholegrain mustard or dijon mustard (or both)
1. Drizzle olive oil on the outside surface of the bread slices.
2. Top the bottom slice with goats cheese, beetroot, rare roast beef, sauerkraut, mustard, tomatoes and rocket.
3. Close sandwich press ensuring olive oil side is on the outer surface of the sandwich.
4. Cook in the sandwich press until golden, cut in half.
