RECIPE: OVERNIGHT ALMOND CHIA PUDDING

Overnight Chia Pudding Susie Burrell

Need something to brighten up your mornings? We spoke to Susie Burrell, from Shape Me, about some breakfast options and she suggested this delicious pudding. It’s one of her favourites because chia is a nutrient-dense way to add fibre, omega 3 fat, protein and key micronutrients to your diet. Enjoy!

Overnight Almond Chia Pudding
(Serves 1)

You’ll need:
4 tsp. chia seeds
150ml unsweetened almond milk
1/4 cup frozen blueberries
Drop of vanilla essence
Mint leaves, a handful of berries, to serve

Here’s how:
1. Combine all ingredients in a bowl, refrigerate overnight.
2. Serve in a clear glass, top with any leftover blueberries and mint leaves.
