Need a tasty snack between meals that won’t break the appetite bank? These nutty, lemony snack balls from the guys at Nuts for Life, are the perfect mid-morning or mid-arvo fix. Make them at the start of the week and snack for five days straight without having to restock. Now that’s our kinda snack.

Macadamia Lemon Snack Balls

Serves: 18 balls
Prep Time: 10 mins prep + 1hr refrigeration

You’ll need:

1 cup raw macadamia nuts (150 g)
1 cup desiccated/fine coconut (75 g), plus 2 – 3 tbsp extra for rolling
Zest from 1 lemon
1/4 cup lemon juice (60 ml)
1 tsp vanilla
2 tbsp maple syrup or rice syrup (40 ml)
2 tbsp coconut oil, melted (40 ml) (Tip: Replace this oil with 2 tbsp almond meal, for a softer ball)
1/4 tsp sea salt

1. In a food processor, blitz macadamias to a rough puree. Add lemon zest and 1 cup coconut, and pulse to combine.

2. Add lemon juice, vanilla, syrup, coconut oil and salt to macadamia mixture. Pulse until well mixed, refrigerate 1 hour or until firm enough to roll.

3. Use a tablespoon measure to scoop balls, roll to smooth then toss in extra coconut. Store in refrigerator or freezer.
