Healthy treats to make

Looking for a healthy treat for that you could make with your eyes closed (not recommended!)? So were we. Until we found this amazing recipe from Sydney-Based nutritionist, personal trainer and whole foods chef, Jacqueline Alwill. 

“Sometimes the best recipes are created with the least ingredients on hand, which is exactly how these knock-your-socks-off Peanut Butter Popcorn Bars came about,” she explains. “Made with three ingredients combined in minutes then into the freezer to set before, undoubtedly, being devoured by all the family. You can swap honey for 1/4 cup rice malt syrup for a vegan option if you wish.”

Jacqueline Alwill’s Favourite Healthy Treat

Prepararation time: 5 minutes
Cook time: 5 minutes
Setting time: 3 hours
(Makes 16)

You’ll need:

4 cups cooked popcorn (approx 2 tablespoons kernels)
3/4 cup smooth peanut butter
1/4 cup honey or rice malt syrup

1. Place peanut butter and honey or rice malt in a small saucepan on low heat and whisk together until it is slightly runny. Be careful not to leave it on the heat too long or it will become crumbly.

2. When ready, place popcorn in a large bowl, pour over peanut butter and honey/rice malt mix, and then combine together using clean hands.

3. Line a loaf tin with greaseproof paper and press the bars into the tin. Cover and place in freezer to set for two-three hours. Once set, slice and serve, they keep out of the fridge or freezer and hold together for about three hours.
